Eighteen Oysters and Apps — A Simple Shellfish Night

Sometimes the best dinner plan is almost no plan. A couple seats. A pile of oysters. A few apps. Done.

I saw someone write about taking their partner out for eighteen oysters and some starters, and it stuck for a simple reason. That is my kind of night. Not a tasting menu with a script. Not twelve courses and a speech. Just shellfish, something hot on the side, and time to talk.

Eighteen sounds like a lot until you split them. Nine each is a real dinner if the oysters are good. Add one or two apps — maybe something fried, maybe a salad, maybe bread if the place does it right — and you are fed without turning the table into a project.

We are picky about oysters. We want them cold. We want them clean. We want thick, meaty ones — not the watery little shells that look pretty and disappear in one sip. And we want to know where they came from. In Canada I think first of BC and PEI names on the ice. In Hong Kong or Macao I ask what showed up that day. If the server cannot tell me, I order fewer.

Sauce is optional. Lemon is enough. Mignonette if they make a decent one. I do not need a dozen toppings fighting the oyster.

This is also an easy couple format when you do not want to overthink. Share the dozen-and-a-half. Share the apps. Skip the “what are you getting” negotiation that lasts longer than the meal. If one of you wants a glass of wine or a beer, fine. If not, also fine.

I have not been to the Upstate spot from that post. I am stealing the shape of the night, not the address. Next time we want a low-drama dinner, this is the template: oysters first, apps second, leave while it still feels good.
